Changing Our Ways

Hey All,

Bigmista’s Barbecue has been evolving for some years now. We learn as we grow and we grow as we learn. Because we created our business on a learn as we grow type of plan, we take advice, corrective criticism and learn from our mistakes. Yeah formal education is in the plan but right now we need to pay our mortgage and feed our family.

I’m not an outspoken advocate for environmental change but I try where I can and hopefully teach my daughter to be more aware then her parents. I do my best to recycle. I hate throwing plastic in the trash and fuss at Neil all the time when he does it but sometimes I can’t find an alternative for disposal. I’ve kept cans and plastic in my car until I remember to put them in the recycle can at home. It gives me an even better feeling to give them to folx I see collecting for the sake of survival.

Anyway I digress. I said all that to say we’re changing our ways. Our change serves two purposes for us. Not only are we doing our small part environmental but we’re also trying to bring some Texas charm to your lives by doing away with so many plastic containers and instead wrap meat in paper. Believe it or not we had this discussion almost at the beginning of doing our first market, we just never implemented it. We haven’t made it to the butcher paper stage yet but that is what we’re aspiring to.

We’ll still package meals in the 3-compartment containers but meat by the pound or rack will be in paper. We also want to do away with all the fly away plastic bags so we’re moving back to paper. We know a lot of you prefer the plastic for easier carrying but personally Neil and I like paper a whole lot better. And what better advertising for a food joint then a greasy paper bag. I will however try and sale Neil on the paper bags with handles for larger orders.

So just know if we say paper or plastic that’s what we’re talking about. And if you opt for plastic it’s gonna cost you a quarter.

Tomorrow our episode of TLC BBQ Pitmasters airs. It features Bigmista’s Barbecue, Diva Q BBQ, Big Poppa Smokers and Smoking Triggers in an all out BBQ showdown. Executive Producer John Markus and I were on the Barbecue Central Radio Show earlier this evening talking about the show. It will be up in Podcast form tomorrow. I hope you will check both shows out and leave comments about what you thought.

For those of you who haven’t seen it yet, we were the cover story for the L. A. Times Food section on July 1, 2010. It was written by Miles Clements and edited by Russ Parsons.

I cannot begin to convey how impressed we were by the article. It covered our history, our business and our BBQ in great detail and you can tell it was crafted by someone who really got who we are and what we do.

Because of this story our business has gone crazy! Our lines were longer than they have ever been with people anxious to try our food. The best advice I can give is PRE-ORDER! Call us. Email us. Hit us on Facebook or Twitter. But if you want to insure that you get your order of fantastic BBQ before we run out, PRE-ORDER!

Bigmista hits the road with Fresh & Easy

It’s summertime and I am once again teaming up with Fresh & Easy Neighborhood Markets to share some great grilling tips with folks all over California, Nevada and Arizona. I’ll be making tv appearances as well as grilling up some tasty treats at a Fresh & Easy store near you.

So grab your friends and family and come out to try some burgers, Italian Sausage and chicken from the Grill Pack when I come to your town. We’ll have a lot of fun at Fresh and Easy. Check out the pics from our first events here.

Faded 420 BBQ & Show tomorrow!

Tomorrow we will be cooking at the Second Annual Faded 420 BBQ & Show at the Rhythm Lounge in Long Beach. It promises to be a great party and I hope all of our friends come out to join us there. We will be serving MOINK Balls, Pig Candy, Perfect Pulled Pork Sandwiches and lots of other goodies. There will be some great live music and lots of merchandise vendors selling their wares.

Come on out for some great Barbecue. We’ll be the ones with the legal smoke…

Three reviews and an announcement

What a great weekend! We three great reviews in 2 days!

The first one is by Jeff Greene of The Taste Place. He reviewed the Valentine’s Day special that he and his wife got from us. Lots of great pics of the Atwater Village Farmers Market and our food.

The next review is by Tammy of TruckTraq.com. She called early Sunday morning looking for Pig Candy and got lucky. I made some for a catering job and had a few orders left over. So she drove up from West L.A. just to get some. She ended up getting a lot more and enjoying it more than she expected.

The last review came from gourmet caterer & photographer Louise Samora-Mellor from ArtofCuisine.com. She writes a blog called “Satisfied” and I think she was. My favorite line from her review was, “First bite and I realized that although I have been here and there, really … everywhere for BBQ, this was the first time I had ever eaten REAL BBQ.”

Bigmista’s Barbecue will be competing for the first time as it’s own team at the Que’n for Kids BBQ Festival put on by Kristie’s Foundation, one of our favorite charities. It will be on June 12th at the OC fairgrounds and I hope yo uall will come out to support us and the Foundation.

We made the list!

L. A. Weekly’s Jonathan Gold, a Pulitzer Prize winning food critic, just put out his “99 Things to Eat in L.A. Before You Die” and we made the list!!

Here’s what he had to say:

If pigs had their way, pig candy would be made out of chocolate — better yet, out of chocolate positioned in a trough right in front of them. But for better or worse, pig candy is the vernacular name for a snack made out of smoky, thick-cut bacon baked with lots and lots of brown sugar until it transforms itself into demonically fragrant slabs that bear more than a passing resemblance to pork-belly terrine. You want some of this stuff. Really you do. And if you should happen to be in Atwater on a Sunday morning, you should probably swing by the barbecue concession ’round the back, because Bigmista and Mrs. Mista will set you up with the best.
