Practice Competition Chicken

If you’re going to compete in anything, you have to practice. That includes BBQ competitions. Mrs. Mista is truly sick of bbq chicken right now but I have to keep practicing to get it right. Here are some pics of my latest barbecue chicken practice. What do you think?

I am really excited about this new method for competition because it means no more scraping chicken skin!!!!
If you compete, you know what a relief that is!

By the way…it was damned tasty!

    Yeah, these were just a quick trim. I was trying new rubs and sauces. And the new texture technique. If you don’t have taste and texture, appearance is pointless.

    Whew!! Thankfully you included the bite shot!
    IMHO: good bbq can probably look like hell and still win on flavor!

    Do you brine your chicken to add moisture? Do you smoke the chicken, or grill only?
