Faded 420 BBQ & Show tomorrow!

Tomorrow we will be cooking at the Second Annual Faded 420 BBQ & Show at the Rhythm Lounge in Long Beach. It promises to be a great party and I hope all of our friends come out to join us there. We will be serving MOINK Balls, Pig Candy, Perfect Pulled Pork Sandwiches and lots of other goodies. There will be some great live music and lots of merchandise vendors selling their wares.

Come on out for some great Barbecue. We’ll be the ones with the legal smoke…

Bacon Wrapped Salmon

Bacon Wrapped Salmon with Rice and Spinach Cucumber Salad

I wanted something simple for dinner tonight so I took a look in the fridge to see what I could improvise with. I decided I would try Bacon Wrapped Salmon. It’s hard to think of anything that bacon doesn’t make better so how could I go wrong?

I started out by frying the bacon for a few minutes. My reasoning was that if I cooked the fish long enough for the bacon to cook from raw, I would dry out the fish.

When the bacon was about 3 pieces of salmon. I seasoned them with Kosher salt, black pepper, garlic powder and Italian Seasoning.Then I wrapped the salmon with 3 pieces of bacon each.

Then it was into a 350 degree oven for about 15 minutes. Nothing hard about that.

I served it up with some rice and a spinach cucumber salad. A nice summer meal in about 30 minutes. Now I have to go flip a coin with MrsMista to see who gets to take the extra piece for lunch.

Broccoli Bacon Salad

Broccoli Bacon Salad, Pork Chops, Bigmista, The Survival Gourmet

I went to Wichita, Kansas last weekend and I did a lot of eating with some of my BBQ buddies. While I was there, Janet, the wife of our host, made an incredible Broccoli Bacon salad. I decided to try and recreate it last night without the recipe (silly me!) because I haven’t received my copy yet (nudge, nudge Mr. BBQ Grail!). Here is my approximation of this great salad.

Ingredients:

2 small heads of broccoli, chopped into small pieces
1 small red onion, chopped
1/2 lb. bacon, fried crisp and chopped or crumbled

Dressing:
3 oz. Miracle whip
1 oz. white wine vinegar
2 tsp salt
2 tsp black pepper
1 tbsp sugar

Put the first three ingredients in a large bowl that has a lid (yes, pull out your tupperware). Put all of the dressing ingredients in a separate bowl and mix well. Pour the dressing in the large bowl and put the lid on. Shake well untill all of the ingredients are covered. I served mine with fried pork chops and rice.
